What you will study

This program will teach students how to dry cure salami, make their own cheese or create their next culinary brand. Through live, chef-driven demonstrations, lectures, and immersive hands-on practice, students will build on their foundational culinary knowledge and gain experience with ancient techniques and processes practiced in Italy, France, Spain and other countries. Learn how to ferment, cure, preserve and fabricate to get the most out of every product. Students will also gain valuable business skills that will allow them to create and execute a business plan, navigate government regulations and approvals, and learn how to operate their own independent business.
